BEAUTY FOODS: Summer Salad with Avocado, Hearts of Palm, Cherry Tomatoes and a Lemon Garlic Vinaigrette {V, GF}

It's been a hot summer so far, one filled with endless days of sunshine. I've been outdoors as much as possible, trying to soak up as much vitamin D as I can, enjoying the warmth and working up a sweat. This type of weather calls for delicious, bright, colorful salads - salads that will cool the body down and nourish without leaving you feeling overly stuffed.

I first came across a salad similar to this when I was visiting New York City, years ago. There was a cafe in Union Square (it's closed now and I forget what it was called), but they served a delicious salad filled with cherry tomatoes, avocado and hearts of palm. I loved how simple yet flavourful it was, making the perfect healthy meal. 

You can whip this up as an awesome vegan, gluten-free side dish or if it's your main course, add your favourite protein on top and you've got yourself a winner. Don't underestimate the tastiness of this easy vinaigrette. It pairs with about a million things so I would recommend doubling or tripling the recipe and storing the extras in the fridge for the rest of the week. 

Here are some of the beauty, skin and nutrition benefits in this salad:

AVOCADOs

Always eat brightly colored fruits and veggies with fat! This is because healthy fats like the ones found in avocados help our bodies to absorb the carotenoids found in these foods as well as fat soluble vitamins like A, D, E and K.

LEMONS

Lemons help to promote clear skin by supporting the liver through improved bile secretion. They also helps to improve digestion, purify the blood and are high in collagen-boosting vitamin C. 

GARLIC

Garlic has antibacterial and anti-fungal properties. Garlic stimulates digestive juices and purifies the blood. 

ARUGULA

Arugula is high in vitamin A which means it pairs perfectly with avocado to increase this fat-soluble vitamin's absorption. Vitamin A is an important nutrient for healthy, clear skin and it also protects the skin from free radical damage.

Summer Salad with Avocado, Hearts of Palm, Cherry Tomatoes, Arugula and Fresh Herbs (V, GF)
Serves 4
INGREDIENTS

2 cups cherry tomatoes, sliced
1 400 ml can or jar of hearts of palm, drained and sliced
1 avocado, diced
2 handfuls fresh herb leaves (I used basil and mint)
4 handfuls arugula leaves

INSTRUCTIONS

Combine all ingredients in a large bowl. 

Just before serving add vinaigrette, toss and enjoy.


Easy Lemon, Garlic and Olive Oil Vinaigrette (V, GF)
Makes 1/2 cup
INGREDIENTS

Juice from 1 1/2 lemons
1 small garlic clove, minced
1/2 teaspoon pink himalayan sea salt
6 cracks black pepper
1/3 cup extra virgin olive oil

INSTRUCTIONS

Comine all ingredients except for olive oil in a bowl. Using a whisk, slowly drizzle in the olive oil while whisking to emulsify. Will keep in an airtight container in the fridge for 3-5 days.
